I love the creamy and crunchy texture of fresh coconuts. Their flavor in baked and cooked food is quite exceptional too. Coconuts taste good and are quite nutritious, rich in fiber and essential vitamins and minerals, there’s a lot to love about coconuts.

This recipe for coconut and peanut balls is a great way to incorporate coconuts into a sweet treat. With no preservatives or artificial additives just fresh coconuts, peanuts, milk, and sugar, they will make a great family snack. It is very simple to make and kid-friendly too. When you pop one into your mouth you enjoy its crunchy, chewy texture. The peanuts and coconuts add crunch while the milk and sugar add creaminess and sweetness. Nutmeg and cinnamon are optional but their flavor ties it all together. You can add any other nuts you desire to add more crunch.

How to make coconut and peanut balls:

For this recipe, you need just fresh coconuts, powdered milk, sugar, peanuts, nutmeg, or cinnamon and water. Firstly, grate the coconuts then mix with milk, water, sugar, and nutmeg or cinnamon. Stir the coconut mixture over low heat till the moisture evaporates and the grated coconut sticks together. Heating the sugar over low heat turns it into a syrup that binds the coconut. Finally, add chopped peanuts. When the mixture is warm to touch, form into balls and refrigerate.

Coconut and peanut balls are simple to make and very kid-friendly. They are great as a snack and will last for as long as a week if kept refrigerated, but if you have kids at home, I doubt they will last that long. Ingredients  

  • 1 cup freshly grated coconut
  • 1 sachet powdered milk
  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1/4 tsp nutmeg or cinnamon
  • 2 tbsp chopped peanuts

Instructions 

  • Cut and grate coconuts
  • Mix grated coconuts with milk ,sugar, nutmeg and water in a sucepan
  • Cook on low heat while stirring constantly for about 15 to 20 minutes
  • When moisture evaporates and is moist and sticky, add peanuts
  • When the mixture is warm to touch, roll into balls with your palms
  • Refrigerate and serve cold
